A staple in our home, this is one of the first recipes I ever taught my kids. It is a go-to for all, super quick & easy, it is a great recipe for last-minute guest or late dinner request. 

A recipe that truly anyone can make, I also love sharing it with my friends, the past week I stepped into my dear friend Lisa Breckenridge of  kitchen to show her how simple, easy and delicious this recipe is and one that her kids would love!

RECIPE: 10 Minute Pasta: Last Minute Pasta Sauce

8 ounces of Farfalle or Penne Pasta

1-1/2 tablespoons table salt

1 tablespoon extra-virgin olive oil

¼ cup extra virgin olive oil

2 scallions, chopped small

2 small cloves of garlic peeled and smashed

1 teaspoon red pepper flakes

½ cup dry white wine

4 cups of baby Roma tomatoes sliced lengthwise top to bottom or cherry tomatoes sliced in half in the middle

1-teaspoon kosher salt

¼ cup Italian parsley loosely packed, rough chop

6 basil leaves, rough chop

1 cup freshly grated Parmesan cheese

8 leaves of basil rolled tightly and sliced thin

In a saucepan heat ¼ cup olive oil for 1 minute on medium-high heat. Add scallions, garlic, and red pepper flakes, sauté for 2 minutes then add the wine and cook down by half.

Add tomatoes, salt and mix well.  Cook 2 to 3 minutes shaking the pan back and forth to heat the tomatoes through. Add your favorite pasta cooked al dente*. Turn the heat up under the skillet for 1 minute to heat through. Plate into individual bowls and garnish with fresh basil and Parmesan cheese.      10minpasta cristina ferrare
